Tender marinated pork loin rolls roasted to perfection and served with short grain rice, sesame seeds, and fresh greens. This flavorful dish brings a taste of Korea to your table. Serve with a Tito’s Spicy Ginger Cocktail.
Ingredients | Serves 4-6
- 1lb. Grand Western pork loin, cut into ½-inch slices
- Short grain rice, prepared
- Sesame seeds, toasted
- Green onion, thinly sliced
- Red leaf lettuce, shredded
For the marinade
- ½ cup Asian pear, pureed
- ¼ cup yellow onion, pureed
- 4 cloves garlic, grated
- 1 tsp. fresh ginger, grated
- 1 green onion, minced
- 1 Tbsp. soy sauce
- 2 Tbsp. brown sugar
- ½ tsp. fresh-cracked black pepper
- 2 tsp. toasted sesame oil
- 3 Tbsp. sambal chile sauce
Preparation
- Combine the marinade ingredients and set aside.
- On a board covered with plastic wrap, arrange the slices of pork so they are just overlapping, creating a rectangle, and then season with pepper.
- Carefully roll the slices lengthwise to create a roll; then tie tightly with four pieces of cooking twine.
- Add pork rolls to a large plastic bag and pour over the marinade; refrigerate for at least eight hours, preferably overnight.
- Remove from refrigerator at least 30 minutes before cooking.
- Preheat oven to 400 degrees, and add pork rolls to a shallow baking dish.
- Pour the marinade into a small saucepan, and allow to simmer over low heat while the pork roasts for 20 to 30 minutes, or until an internal temperature of 145 degrees is achieved.
- Once the pork is cooked, remove from the oven and rest, uncovered, for 10 minutes.
- Remove the twine and slice. Serve with rice and sauce; garnish as desired.
