Coconut-Lime Pomegranate Mojito Recipe

Ingredients

  • 8 fresh mint leaves, plus one sprig reserved for garnish
  • ½ oz. fresh lime juice
  • ½ oz. fresh Key lime juice
  • ½ oz. agave syrup
  • 2 oz. white rum
  • ½ oz. pomegranate juice,
  • plus arils for garnish
  • 1 oz. coconut cream
  • Club soda, if desired

Preparation

  1. In the bottom of a cocktail shaker, muddle together 8 mint leaves, both lime juices, and the agave until the mint leaves are broken down.
  2. Add the rum, pomegranate juice and coconut cream, then fill the shaker full of ice.
  3. Shake until the cocktail shaker has a light film of cold ­condensation on the outside.
  4. Strain the mixture into a cocktail glass filled with fresh ice.
  5. Top with club soda, if desired. Garnish with mint leaves and pomegranate arils.
