Snapper with Green Curried Black Rice is a perfect main course with this cocktail.
Ingredients
- 8 fresh mint leaves, plus one sprig reserved for garnish
- ½ oz. fresh lime juice
- ½ oz. fresh Key lime juice
- ½ oz. agave syrup
- 2 oz. white rum
- ½ oz. pomegranate juice,
- plus arils for garnish
- 1 oz. coconut cream
- Club soda, if desired
Preparation
- In the bottom of a cocktail shaker, muddle together 8 mint leaves, both lime juices, and the agave until the mint leaves are broken down.
- Add the rum, pomegranate juice and coconut cream, then fill the shaker full of ice.
- Shake until the cocktail shaker has a light film of cold condensation on the outside.
- Strain the mixture into a cocktail glass filled with fresh ice.
- Top with club soda, if desired. Garnish with mint leaves and pomegranate arils.
